Tiki Masala

 

Ingredients/Marinade


1 c. Coconut milk

1 tablespoon lemon juice

2 teaspoons ground cumin

1 teaspoon ground cinnamon

2 teaspoons cayenne pepper

2 teaspoons freshly ground black pepper

1 tablespoon minced fresh ginger

2 teaspoons salt, or to taste 

3 boneless skinless chicken breasts, cut into bite-size pieces

4 long skewers

Mix all ingredients in a large glass bowl, marinate at least 30 min-1hour

Grill Skewered Meat, set aside

Ingredients/Sauce


2 T Coconut Oil

2 Cloves Garlic, minced

1 T. Siracha

4 t. cumin

4 t. paprika

Salt

1 (16 oz.) can Tomato Sauce

1 can Coconut Milk

½ c. Cilantro, chopped

 

Melt coconut oil in a large heavy skillet over medium heat. Saute garlic for 1 minute. Season with 2 teaspoons cumin, paprika, and 3 teaspoons salt. Stir in tomato sauce, siracha and cream. Simmer on low heat until sauce thickens, about 20 minutes. Add grilled chicken, and simmer for 10 minutes. Transfer to a serving platter, and garnish with fresh cilantro. Amazing with Naan Bread!!
